Fit Friday: 3 Ways to Survive Mother’s Day Eats

The month of May is always exciting, and the one holiday that many of us celebrate is Mother’s Day. The temptation of food accompanied by the holiday can make you get off track from your fitness and nutritional journey.  If you’re worried about not being able to resist temptation, don’t worry. Check out these great tips to help you stay on track for the Mother’s Day Holiday!

1. Breakfast in Bed

Give your favorite girl a special breakfast in bed. Bring breakfast to her with this quick and easy healthy recipe that eliminates the heavy lines around the corner or 3-hr wait times at our favorite restaurants. Every mother needs to be appreciated and shown love even if they’re not on a weight loss journey. This will start your day off right!

Egg White Frittata with Lox and Arugula

Total Time: 18 min

Prep: 6 min

Cook: 12 min

Serves: 4 to 6 people

Level: Easy

Ingredients

8 egg whites, room temperature

1/2 cup whipping cream

6 ounces lox, chopped into 1/2 inch pieces

1 lemon, zested

1/2 teaspoon kosher salt

2 tablespoons freshly ground black pepper

2 tablespoons olive oil

2 packed cups (2 ounces) arugula

1 clove minced garlic

Preheat the oven to 350 degrees and place an oven rack in the center. In a medium bowl, whisk the egg whites until fluffy for about 30 seconds. Add the cream, lox, lemon zest, salt and pepper. In a 10-inch, oven-proof, nonstick skillet, heat the oil over medium heat. Add the arugula and garlic. Cook, stirring frequently, until the arugula wilts, about 1 minute. Pour the egg mixture into the pan and stir to combine the ingredients. Cook, without stirring for 4 minutes. Transfer the skillet to the oven and bake until set for about 10 to 12 minutes. Slide the frittata onto a platter. Using a serrated knife, cut the frittata wedges and serve warm or at room temperature.

-Swim
-Fun Bowling Game
-Downtown Siteseeing
-Bicycling

Make sure you enjoy yourself and that the activity of choice is fun for all!
